Golden Choco Kaju Katli
Kaju katli is literally "cashew slice" . It is one of the traditional most loved Northern Indian desserts. I have fond memories associated with kaju katli, one of which is when we used to visit my in-laws in Coonoor-Nilgiris, Tamil Nadu, along with my niece and nephew. We used to run into the kitchen to find out what was the sweet smell filling the entire house, and there would be my smiling mother in law, she would ask us to close our eyes, and TA DA!! Magic! There would be freshly made, yummy kaju katlis before us, which would not last longer than 5 mins, as we all pounce and grab and gobble them all. Cherishing the dessert and the memories I have added my own chocolate twist to it and some magical gold sprinkles. These Cashew-rich homemade kaju katli is said to be good for heart health, and are easy to make, takes less ingredients and time and are wholesome.
Ingredients
1 cup cashew / kaju
½ cup sugar
¼ cup water
½ tsp ghee / clarified butter
¼ tsp cardamom powder
½ cup coco chips
2 tsp gold sprinkles
Instructions
1. Firstly, in a mixer take 1 cup cashew and blend to a fine powder. make sure to pulse and blend else, the cashew will release oil and turn into a paste.
2. Sieve the cashew powder making sure there are no lumps. keep aside.
3. In a large kadai (kettle or pot) take ½ cup sugar and ¼ cup water.
4. Stir well and dissolve sugar. boil for 5 minutes or until 1 string consistency is attained.
5. Add in powdered cashew and mix well.
6. Stir continuously until the mixture is well combined and smooth paste is formed.
7. Add ½ tsp ghee and ¼ tsp cardamom powder. mix well.
8. continue to cook until the mixture turns smooth paste and starts to separate the pan slightly, do not overcook, as the burfi will turn hard.
9. Transfer the mixture onto the butter paper, grease the butter paper with ghee.
10. Fold using a spatula until the mixture thickens forming a dough.
11. Once the dough is formed, knead slightly, to form a soft dough.
12. Place the cashew dough between butter paper and roll using a rolling pin, roll slightly thick making sure it's uniform.
13. Now cut into diamond shape or shape of your choice.
14. Take a bowl and add choco chips, microwave until 2 mins, stir to make sure the chocolate is melted
15. Dip the katli once it hardens into the chocolate bowl, cover half/ fully as per your choice.
16. Sprinkle some gold sprinkles on the katli and leave it to dry, once it dries it hardens.
17. Finally, enjoy kaju katli. It can be stored in an airtight container, it can last until a month
